I've been wondering ..
If you switch the Air Con & Heating System off does the Enyaq still blow air or allow air to vent through the Windscreen Vents like my ICE car does ??

Nope.
Personally I think it’s a bit of a design flaw.
There is no engine thus air intake isn’t required for cooling purpose thus to active airflow through motion of the car alone.
It’s a very odd scenario where you just want air and you have to turn the fans etc on to take it in where a small air vent at the front of the car would have sufficed.

If you turn off the Climatronic climate control the air flow and fans stop but it is possible to turn off the air conditioning unit and heating and keep the fans on, however it is not intuitive. The manual states that turning off Clima turns off air conditioning but it turns off everything
If you select the classic air conditioning system rather than smart system you have more control of settings. If you turn off A/C but leave Clima on this will prevent active cooling using the air conditioning. You can control the fan speed manually. If the interior temperature for any zone drops below the set temperature then the system will actively heat the air. This can be prevented by setting the minimum possible temperature which will be indicated by LOW or LO depending on which display you are looking at.

Even on a car with an engine, the air intake for the climate doesnt have anything to do with the engine cooling... They are always VERY seperate, to ensure you dont get any fumes or smells from the engine compartment into the cabin.
Most modern cars with climate control have a damper flap and will actively close the intake when you turn the fans off. Which makes sense, if you turn the fan off for whatever reason, and airs still blowing thru because your doing 70mph, thats kinda counter intuitive.
The real question though, is why would you ever want such a feature? If you want air to get to your windscreen, let the car do exactly that?
