I picked up our IV60 two weeks ago.
No issues what so ever with the Climatronic. Works exactly like the ICE it replaced.
Gets plenty warm enough and gets plenty cold enough. Went on a 140 mile round trip and it gets to the point where you have to turn A/C off due to been too cold.
I have used any of the quick options available, I use use the manual controls if that helps.

I pick my Enyaq up today, so will try it for myself later. It's not exactly hot today though, so not really needed. What I have found with my other electric car (Renault Zoe) though is that when I have it in Eco mode, as well as tempering the throttle it also makes the A/C pretty much ineffective. I wonder if the Enyaq is the same.

I remember going from a Vauxhall Vectra to a new Audi A4 in 2009 - and being quite surprised/disappointed that the Audi’s A/C was no where near as powerful (regarding cooling) compared to the Vectra I’d just returned. This was the same on a ‘twin’ A4 the company had delivered at the same time, so possibly some systems are less effective than others?

I guess doing some objective tests rather than subjective might be required. Climate control will aim to get the interior temperature to the set value, but the exact choice of fan speed, vents, and whether the aircon compressor runs or not that the computer uses is unknown to us. I would imagine that it's been designed to minimise electricity usage but still reach the target reasonably quickly on the Enyaq. Some cars are a bit too aggressive - one of my old Subarus for example would blast out as cold air as it could at as high a speed as it could to get the temperature down, then reduce the fan speed once it hit it. Yes it gets the job done, but it's not pleasant for the occupants of the car. My Pajero on the other hand would take ages, but once it got there it'd hold it quite well.
So maybe try this: car parked in shade with the windows open for 10 minutes to allow the inside air to match outside. Note the outside air temperature. Set the car to be 5C cooler on the climate control. Put a thermometer on the passenger seat and start a stopwatch. Time how long it takes for the temperature to reach the set figure.
If someone with suspected non-working aircon can do that, and someone with suspected working aircon can, we have something to go on.

Help please. Does anyone know of a dealership that has the specialist equipment to test the level and pressure of the CO2 in the climatronic system. Anywhere in UK will do. My dealership, central southern England, south coast, have not, despite their best efforts, been able to identify one in this area after 3 months plus of trying. Thank you.
Any Skoda, VW, Audi or Cupra dealership should be able to do it. Or at the very least plug their diagnostics tool in to read the status from the control unit.

Thanks RichR. I believe that the dealership diagnostics have all been done via their plug in diagnostic equipment. As you mentioned in your heat pump explanation the CO2 system is under some serious pressure and I think the equipment that can deal with that and potentially 're-gas' and re-pressurise the system is what is required. I expect that such equipment is very expensive and seldom used so wouldn't make economic sense for them to buy.
Whilst I agree many small garages might not have the equipment, a lot of cars have R744 systems these days so you'd expect a dealership selling cars that use it to be capable of servicing it.
I can't believe they can't find somewhere that has the equipment, that sounds like an excuse to me. Have they contacted Skoda UK? Maybe worth you dropping customerservices@skoda.co.uk an email explaining what's happened so far and see what they say. They may well be able to either point you to another dealership, or contact yours to tell them what to do.
